[...] This means I get to go cycling in the woods near my house of an evening, marveling at the shadow kites cast by the evening sun shone through treetops, while simultaneously cowering inside every time a branch cracks or a bush rustles nearby. [...]

"Despite all of this, I’m wondering how it would play out if something did jump out from behind the trees and go for me. How would I roll, where would I put my hands? Do you shout, scream and run, or hush, quiet and lay down? Grizzly Man would totally know."

With either wolves or bears, it's lie down and play dead; I'd use that strategy for the other one, too. Try and remain calm, as well. Definitely do not scream and run--screaming not only lets the predator know you're afraid, but where you are, and dogs (and wolves) have an instinct to chase. Cats are also enticed by movement.
